Fish is one of the oldest food sources in the world, predating humankind by epochs too great to be measured.  Fish are a source of protein, trace minerals, and essential fatty acids, such as the much–touted Omega–3 fatty acids.  Essential fatty acids are necessary for proper brain growth, development and maintainance, lending substance to the old description of fish as "brain food".

Unfortunately, in our current era, the world's waterways have been so polluted as to render any food taken from them into a health risk, or at very least a dangerous gamble, without careful testing.  Organic aquaculture farms seem to provide an answer to this, but only if the waters in which their fish are raised are thoroughly tested for mercury, organochlorines, heavy metals, and other toxins.

If you are so fortunate as to have available to you a source of safe freshwater fish or seafood, you may choose to take pleasure in enjoying once again this most ancient of foods.  Note:  Please remember that allergies to fish and seafood can be among the most serious known, and even exposure to the aerosolized particulates and droplets of moisture and oils that we think of as scent can cause a serious reaction in sensitive individuals.  Allergy or sensitivity to iodine can also preclude safe ingestion or exposure to fish and seafood, so know your own tolerances before choosing to consume these foods, or consult with a knowledgeable and experienced health professional.

When choosing fish, look for the following:

  • Fish should be as fresh as possible
  • there should NEVER be a "fishy" odor
  • fish should be stored COLD – 40 degrees Farenheit or less
  • the eye should be clear
  • the gills should be flushed red
  • the belly should smell like the ocean
  • fish should be stiff, not limp
  • red–fleshed fish should be red, not brown

– browning is a sign that fish has been out of the water too long
